Veggie Pursuit

In pursuit of the veggie…

I do not know how long this will last or whether this is just a one week phase, as my coworkers say…

But I have not craved, wanted, or missed meat in four days… except when my neighbor made bacon the other night! Really?  You would.

This is most likely just an attempt to add more meatless days into my routine  or perhaps a system cleanse.  Whatever it is, it has been delicious!

Cue the homemade asparagus pistachio pesto.

I just used the same process here

Added a bushel (correct word??) of asparagus.  First I cooked the asparagus in a pot of water for about 7 minutes, chopped it up and added it to the food processor.

I really could just lick the food processor clean 🙂

Pesto Pesto!

Living in Italy, one of the things I could not stop eating was fresh pesto.  HMMMMM yum. In pasta, on bread, in paninis.  Hmmmmm pesto pesto! And then all of a sudden, I had had my fill, and could not stomach any more.

Really, who gets sick of pesto? I must be a weird human.

I mean I have truly taken a multi-year break from pesto.

However; I discovered a creamy pistachio pesto at one of my favorite restaurants down the street; Buckleys.  I’ve been craving it/wanting to re-create it for awhile now.  And all of those “how do you do” pistachio commercials are driving me nuts. 🙂

So I bought some Pistachios…. How can you not, when everyone and their mom gets paid to advertise them? Maybe me next?  Please and thank you.

This took forever. FOREVER. And my fingers still hurt.  I will not ever be doing this again, unless it is for something mindblowingly special.  For realz.

Into my food processor went:

 about a cup and half pistachios

a couple handfuls of basil

3 or 4 cloves of garlic, (more the merrier for me)

a couple handfuls of fresh parm

adding in olive oil as you go

reducing heavy cream in a sauce pan, stirring in the pesto

add noodles in and enjoy

 Thankfully this turned out absolutely delicious, as I needed a pick-me-up after dropping my keys down the elevator shaft.  Yes, thats right.
